Year 10 Learn the Secret of the ‘Sankeys Smokie’
Matthew Sankey, owner of Sankeys Fishmongers and Restaurants, gave our Year 10 Food students an experience of preparing and cooking fish.
Students worked in pairs to create ‘Sankeys Smokie’ – a signature dish from the restaurants which consists of smoked haddock, cheese sauce and spinach. They used a variety of culinary skills including poaching, skinning a fish, making a roux and grilling. It was a fantastic experience and thank you to Matthew Sankey for coming in again to share his knowledge and experience with our students.
