Sankey’s Restaurant hosts Hayesbrook's first Pop-up Restaurant

On Saturday 8 July, the new function room at Sankey’s Public House hosted our first pop-up restaurant.

Since November 2016, the Year 10 Food Preparation class have been working on creating their international themed menu, discovering the ins and outs of running a successful restaurant and fine-tuning their hosting skills, all under the expert guidance of Matthew Sankey. The lunch and evening service were both a huge success, and with over 40 covers the students had to work hard to maintain a high standard of service and quality food throughout the day. Parents, families and friends filled the restaurant and could not be more complementary of the students; one parent commented, "We are incredibly proud and are very grateful that our son has had the opportunity to experience such an event".

Miss Higgins, teacher of Food Technology at The Hayesbrook School said: "We are all so proud of what the boys have achieved today. Matthew has provided an invaluable and enjoyable experience for all involved, and it was great to see the confidence of the boys growing as the day progressed. The supporting staff and chefs were fantastic with helping the boys before and during service to ensure high standards were maintained".

Restaurateur, Matthew Sankey said: "It was pretty emotional seeing the first few dishes leave the pass into the restaurant. The day couldn’t have gone any better. For me the best part was being able to see their confidence grow throughout the day and I hope that they can use this experience in the future; I’m hoping that at least some of them develop their skills and make their way in our amazing industry. I know I’ve already had a couple of them apply for work over the summer which is great. The last 8 months have been really rewarding for me too, I’ve never taken on a task like this and I’ve learnt a lot, it’s been a win-win. The last word from me though must go to my team at Sankey’s. Spike, Mike and Callum worked incredibly hard throughout the day with the lads to share all their knowledge, I couldn’t have done this without them".

Year 10 student, Jake, added: "It was really invigorating, what an experience! Mr Sankey deserves so much credit for allowing us to run his function room for the day and I think everybody involved really immersed themselves in it. My outlook on how a restaurant operates has changed for the better and now we understand the real challenges involved in running a successful restaurant".
